Kate's Kitchen- The $6 Whole Chicken
Sometimes eating healthier seems to cost more than it should. In this episode I teach you how to stretch your food budget by cutting up a whole chicken into its parts and even how to use the remains to make great tasting low sodium chicken broth. You can save up to $13 by doing it yourself. (This was my first episode, just re-posting it now) You can make a simple chicken broth by using the chicken skin, bones, and whatever leftover meat may be on them and put them into 4-6 quarts of water, add a 1/2 tsp of salt and some pepper. Bring to a boil and then reduce heat to simmer. Simmer for about 45 minutes, let cool. Strain broth. If you are storing chicken broth in the refrigerator, it keeps 3-4 days, keep the fat on top until time to use the broth, and then skim the fat. The fat layer helps keep bacteria out. Bring to a boil for 10 minutes and then add to your favorite recipe. You can freeze it if you know you won't be using it right away. I plan a recipe that uses the broth up so I don't have to worry about it. Once again I would boil it ten minutes and then use it in your recipe.
