recipe for cornbread

Hi...Can anyone recommend a great recipe for cornbread/muffins?  My dietary restrictions are no lactose, but I can usually tweek any recipe to deal with that.  Also, a small amount of powdered milk here and there doesn't seem to bother me.  I know cornbread is generally high fat, but thought Food Lovers may have a solution for this, otherwise wonderful food item.

You could perhaps tweak this one.  It's found in the FL online website.  Perhaps swap the milk out:

1/4 cup Demerara (Florida Crystals)
1 1/4 cup Whole Wheat Flour
3/4 cup Yellow Whole Grain Corn Meal
2 tsp Baking Powder (Sodium Aluminum Sulfate, Double Acting)
1 cup Milk (1% Lowfat with Added Vitamin A)
1/2 serving(s) of (1/2 cup) All Natural Apple Sauce (No Sugar Added) (Great Value)
2 large Egg White
    1. Preheat oven to 375. Spray an 8x8 or 9x9 baking dish.Mix the dry ingredients together. In a separate bowl stir the wet ingredients together. Add the wet to the dry and stir just until combined. Pour into prepared pan and bake 20 minutes or until a toothpick inserted comes out clean and bread is golden brown.
